Wine is a recovery tool with another problem attached in Ritter & Rotwein. The developer says drinking heals the knight while temporarily reducing stability. Restoring health can make controlling the ragdoll harder at the same moment.

That connects recovery to the ground under the character. Jumping, dodging, climbing and fighting are all described physical actions, so a stability penalty concerns more than the health bar. Considering a place to drink is a reasonable consequence of the advertised rule, not a demonstrated safe spot or a tested healing strategy.
